4 Sourdough slices, toasted

Bring a deep saucepan of water to a boil over a high heat. Add the eggs carefully, using a big spoon to protect the shells from cracking. Boil the eggs for 5 minutes. Fish them out of the water with a slotted spoon and put in your egg cups.

Butter the sourdough toasts and cut into soldiers and serve aside the eggs with salt and pepper.

Here are few options for your dippy eggs upgrade:

  • Chilli sauce – use as seasoning
  • Marmite – spread over the toasts before cutting
  • Prosciutto – wrap around the soldiers and lightly fry
  • Asparagus – use instead of the soldiers
  • Pesto – use as seasoning
