Egg White Muffins & Hand Care

As we move into summer, our diets start changing, and lighter, healthier treats begin to emerge, with the heavy eats out, but where do you start? Here at Purely Organic, we are here to give you the much needed eatspirations, but with a zero-egg waste twist, so it is kind to your gut, skin, and our planet!

Nothing says self-care like delicious egg white muffins and hand & cuticle care, it’s time to look after yourself and unwind. Read on to find our variation on egg white muffins, as well as a yolk hand & cuticle mask.

Egg White Muffins

Marvellous Egg White Muffins

Serves 2


  • 3 Purely Organic egg whites (save the egg yolks for the facial mask)
  • 130g of turkey/ham/bacon/chicken, finely chopped
  • 130g of bell pepper, finely chopped
  • 130g of spinach, finely chopped
  • ½ tomato, finely chopped (add to an airtight container to garnish later)
  • ½ onion, finely chopped (add to an airtight container to garnish later)
  • Handful of grated cheddar cheese


  • Preheat your oven to 180°C.
  • Get your cupcake tray and spray it generously with olive oil.
  • Sauté the peppers and onions in a frying pan at a medium-high heat (or for 2-3 minutes), then add your meat of choice, spinach and tomato for another 2-3 minutes.
  • Scoop the mixture evenly into the muffin cups.
  • Separate the egg whites and yolks (save the yolks for later), and whisk the whites and slowly stir in salt and pepper. Pour in the egg mixture over the meat and veg mix, leaving a slight gap to the top of the cup.
  • Place the tray in the oven and cook the muffins for 20-25 minutes, then gently sprinkle the grated cheddar on the muffins and place back in the oven. Cook for
    another 5 minutes, or until the tops are puffy and a toothpick comes out clean.
  • To get the muffins out, lightly run a knife around the edges to help ease them out,
    place them on a plate and top with the remaining tomatoes and onions, as well as
    salsa or any sauce you desire.

This recipe will produce around 8-10 egg white muffins, so be sure to place them in an airtight container for later enjoyment! And even better, they’ll keep for up to 5 days in a fridge. If you would like to keep them for longer, let them cool completely, place in airtight bags and store in the freezer. They’re perfect for breakfast, lunch, and even a snack!

After all of that cooking and cleaning up, your hands may be feeling a little worn and dry…we have the perfect solution for you! Now to put the egg yolk to good use and restore your hands.

Hand Care - Egg Yolk Cuticle Mask

Cuticle Treatment & Nail Strengthener

Serves 2

Ingredients for the cuticle treatment & nail strengthener:

  • 3 Purely Organic egg yolks (saved from the egg white muffins)
  • 1 tbsp of honey (anti-fungal properties fight bacteria, and keep your nails nourished and hydrated)
  • Splash of water


  • Whisk together the egg yolks, honey and water.
  • Apply the mixture to your nails (and hands if you wish), leave this on for 15 minutes.
  • Gently wash the yolk mixture off and pat your hands dry.

We know nail care isn’t for everyone, so if no one wants to join in with you, save the mixture in an airtight container and place it in the fridge. This way, you can repeat the application 4-5 days later. You will notice your nails getting stronger and healthier with each application.
